Can anyone tell me how I can opt out of the awful ebay Simple Delivery?

You can't as a private seller.

Only business sellers don't use it.

If you are a private seller then unless your item is under £10 and 100gms in weight or value over £750 you cannot.

there are exemption lists for certain items and in your account settings you can select your carrier of choice.
