Unfortunately, you will not have any proof of delivery, because there will be no tracking and as it was not listed as a collection item, there will no essential collection code to scan this proves collection.
You will need to mark it as dispatched the usual way.
Perhaps when the buyer comes to collect, ask them if they would kindly leave you some feedback, this also shows the item has been collected and members have confirmed for some, this has released the payout sooner. Otherwise, it may be a 21 day wait for the payout to be released.
The alternative is to cancel the item, refund and relist as a collection item to gain this collection code to be sent to the buyer. Select Buyer requests to cancel, so your seller performance is not affected.
You'll need to message the buyer this is what you are doing, and make it very, very clear that you are relisting the item again for them to buy on eBay. Make it clear this is not for an off eBay sale, as eBay do read all messges going through their system.

I guess another alternative is to send the buyer an empty envelope with the label/QR code or something (they already know what's happening and they've agreed to this method)
He has given me feedback now so let's see if that works, if not I'll do the alternative method

Honesty and trust plays a big part here , when there's no code or tracking, and especially if you send an empty envelope, as the buyer can then open a case for item not as described !
