Delaying posting at buyer request

A buyer has paid for an item but now requests i delay posting it for one week. If I do this will it affect my seller rating?  Will I still be able to generate the Simple Delivery pre-paid label  if i wait a week?

It will affect your dispatch rating so I would cancel/refund with buyer's agreement, and relist nearer the time for them to buy again.
