Arrange a courier to pick up item received tracking details, passed them on to customer. 2 days later I sent it with someone else, how do I change the courier and tracking details?

If it was Simple Delivery you cannot change the courier/tracking. You can contact ebay and see if they will do it for you. You can use callback on here:https://www.ebay.co.uk/help/eua?id=5275&mkevt=1&mkpid
If the tracking isn't updated you will have to wait 14 days for the payment to be released.
