I have had an item returned and I have agreed to refund the buyer and to add the extra postage cost she has incurred....
but how do I change the refund amount?
Ebay isn't giving me the option to do so via the managed return process

Use the refund option under the sold section of your seller hub or My ebay,next to the sold item and drop down section.
If the buyer had used the correct method, that is opening a Not AsDescribed case, you would have had to supply a reply paid label, and on return refund in full . You get the selling fee refunded.
It soundsasthough a case has not been opened and if so you will still have to pay the selling fee. Refunding the payment in full outside a case also gets you a defect on your selling account.
To send the buyer the postage can be a problem as it all depends on how they paid and whether you are on Managed Payments.
If paid by paypal, you can send the buyer a Friends and Family Paymen, but if you are on Managed Payments, there is no system for making payments, and the easiest way would be by Bank Transfer. You could of course send a cheque/postal order but that would involve paying postage.
