They will receive a card from the postman (or lady) informing them there is a parcel waiting at the depot with insufficient postage and that they need to pay XXXX amount before it can be delivered.
So you could send them some money upfront to pay it. Bear in mind that Royal mail charge a minimum of £1 on top of the extra postage for the inconvenience of redelivery so you would have to refund more than the £1.15 you've charged your buyer.
Why not send an apologetic message to your buyer and ask them to let you know when they receive the card through the door, and how much extra there is to pay, and go from there? You could refund whatever you like then?
Large letter 1st class upto 250g is £1.64, so you should be OK.
FYI.
You don't have to buy ebay postage, you can buy it at PO, also ebay charge 10% of P&P, so you will lose on postage, you are allowed to add a small amount to cover packaging.
Never rely on ebay postage estimator, often wrong, work it out yourself.
