I have recently purchased an item and paid. However, the seller has asked me for my phone number for tracking. I have never experienced this before. Is it normal?

Your seller probably wants it to give to the courier company so they can text you to let you know when the tracking says they are delivering it. Yes it is normal practice.

It is asked by the couriers sometimes so that when their drivers are near your home they can call you to let you know

It is usually optional so you dont have to give it if you dont want too.

Many do not want their phone numbers given to anyone
