Although you may feel that you did everything to take care of your buyer, we cannot remove this defect as it is still an indicator of a less than positive buying experience, which we must take seriously. Please note that this decision is final and cannot be changed or escalated.

Defect rate
If your buyer has an issue with the item, you should work with them to solve it. If your buyer asks eBay to step in and the case is decided against you, this will count as a defect.
Ensure your items are in stock so you don’t need to cancel any orders.
Shipping
Ensure that you are shipping items within the handling time that you’ve stated in the listings.
Always upload your tracking to eBay. When possible, we’ll use this to automatically give you credit for shipping on time. Also, it helps ensure your buyers aren’t worried about when their purchases will arrive.
Communicate with your buyer so they know when the item is shipped and what to expect.

Looks like a no win brick wall situation.
I would not use Shutl
eBay do not do this.....the late delivery defect is caused by the buyer ticking the box stating the item did not arrive by the date specified by eBay......simple as that & cannot be removed
You chose to use SHUTL so eBay are not responsible for youtr choice of courier & the SHUTL T&C will cover them
As a private seller a late delivery defect should not adversely affect your account
