If you have identical items, you can set up a multi quantity listing. You need to list them in fixed price Buy It Now format, and there'll be a quantity box on the listing form (click on the more options to see the quantity box).
Put in the amount you have available in the quantity box, as you sell an item it will adjust accordingly.
