Go to your My eBay > Account tab (top left) > Personal Information > Registered email address > Edit
And in your Paypal account > click on the cog icon, top right > Email address > Remove/+
When you sell you will initially have to change it during the listing process (and revise current listings without bids), in the "Payment options" section. Once added to a new listing it will remember it after that.
