I have tried ordering the same item from 3 different sellers but each time my order was cancelled. The first explained the item was out of stock but the second two gave the reason that the buyer had cancelled which I haven't. I have no idea what's going on.
No idea what the item is you are trying to buy but obviously one sounding in great demand.
A seller can cancel orders, though without the buyers permission, they do pay penalties , seller fees, and gain damaging defects on their account.
The cancellation citing out of stock would have the above sanctions imposed. The other reason excludes the penalties. So, there you can if you wish contact eBay CS explain you did not agree to cancel your item, a seller fee will be imposed as will the defect.
There is no email contact with eBay, and as most of their staff are working from home because of Covid, main line is a Live Chat with them, sometimes there's a call back in place.
