Collection Only Items are just that - Collection Only. You are not Required to Pack an Item or wait in all day for a Courier to Collect. The Buyer should Call and Inspect the Item and then Pay by Cash if happy. If they decide that the Item is not suitable they can walk away and you can then Cancel the Sale using "Buyer Requested Cancellation." Your EBay Seller Fees are then Credited back to your Seller Account and you can Relist.
