I have a vegetarian friend coming to stay and I only have 4 vegetarian recipes that I use.
Spicy bean casserole (mixed beans, onions, tomatoes, corriander, cummin and chilli powder,topped with crushed doritos and grated cheese,
Mushroom Rissoto.
Roast vegetable pasta (served with a good dollop of hummus on top).
Vegetable strudle (roasted veg, pine nuts and motzarella in filo pastry).
Can anyone please suggest something easy and tasty that I can cook for him please - the only thing I have a real problem with is pastry - I could pave my path with it, and it would last better than stone!

Was going to suggest roasted vegetables with pasta and cheese sauce, a favourite in our house, although none of us are vegetarians,
Go on be a devil cheat with the pastry and buy it ready made, a real lifesaver.

Savoury bread and butter pudding, made the same as sweet one only with cheese, mushrooms and onions, serve with salad.

Savoury pastry slice. I buy a puff pastry sheet (A*da has it for £1 at present). It's enough for 4 slices, I make 2 and freee the remaining 2 pieces of pastry when flat. Score the pastry about 1cm from edge on all 4 sides. **bleep** the pastry. The topping can be what you like, Usually, I slice tomato, add a little chopped onion, sprinkle with a little grated cheese and some mixed herbs and bake gas 7 for 20 to 25 mins. There will be a suggestion on the pastry pack. Served with new potatoes and salad.
Pizza. I buy pizza bases and add whatever topping we fancy. Quick and easy.
Vegi lasagne. Lots of recipes online. I make a sauce with sliced cougettes, chopped onions and garlic, some grated or liquidised carrots and tinned tomatoes. Layer tomatoe sauce, lasagne sheet and I use cheese sauce, and repeat finishing with cheese sauce on top, then bake gas 5 until the lasagne is cooked, about 40 mins.

You could make any dish that you would usually make with minced beef, but substitute either Quorn mince or rehydrated TVP (Textured vegetable protein). I used to make no end using TVP rehydrated with vegetable stock cubes and it was very economical (and tasty).
How about a spanish Frittata (omelette) with a variety of veg - here it gets made with whatever happens to be left over, sometimes with potato, sometimes cooked pasta, sometimes a mixture of both. Very quick and easy.

A good starter is beetroot and goats cheese salad. Or dips with carrots, breadsticks etc.
As above, I always try to do a veggie version of whatever the meat eaters are having. Quorn is so good for that. Mixed with mushrooms in a cheese sauce with puff pastry top, yummy. Shop bought pastry is great.
Roasted veg with Moroccan spiced cous cous another tasty choice.

Pan fry some butternut squash and add to a salad along with some goats cheese. Use balsamic vinegar for a dressing. 🙂 Can add onions, etc to the salad. Goats cheese goes well with roasted beet root too. 🙂 And throw in a few walnuts for texture and crunch.
