Hi - just wondered if anyone has a simple recipe for Peanut Butter Cookies? Had my first one today and I'm hooked!

I gave these recipes on the old Comp Forum 😞 it was lost when they moved everything around and split up the groups.
Allergies - Gluten free self rising flour can be used, careful for those who have nut or oat allergies and for diabetics - MODERATION 😉 Sorry about anyone allergic to dairy 😞 perhaps if you have a solution you can share it
REB'S PEANUT BUTTER COOKIES
½ cup granulated sugar (4oz)
½ cup peanut butter (4oz) (can be heaped) (you can use creamy or crunchy)
1 egg
1 ¼ cup self-rising flour (10oz)
½ cup light brown sugar PACKED (4oz)
½ cup butter (8tablespoons or about 113.4 grams)
½ teaspoon vanilla extract
almonds or peanut m&ms to decorate each cookie (optional)
Preheat oven to 190c or gasmark 5 (375 F)
Place all ingredients, except almonds in a food processor with the steel mixing blade and process until a large ball forms…. Or you can also do this by hand literally or with a spoon or fork (I do it by hand)
Pinch a bit off and roll into small balls place on baking paper lined cookie/baking sheet flatten with fork (you can use fork to make a “hash tag”) place an almond or a peanut m&m in centre of each cookie (If dough becomes to soft to work with place in fridge for about 5-10 minutes)
Place in oven for 10-12 minutes until lightly brown
Let cool for 1 minute move to cooling rack until completely cool
***optional***
You can add a ½ cup of chocolate chips to the mix or right before placing in oven you can sprinkle with chocolate sprinkles
You can freeze the flattened cookies just layer on baking paper and put in air tight container – take out and bake for about 15 minutes
Reb's No Bake/boiled/drop Cookies (makes about 2-3 dozen depending on size of spoonfuls) If it is very HUMID out these will not set (hard to explain really) This could be considered more of a “sweet candy”
Part 1 Ingredients
2 Cups sugar (16 oz)
4 Tablespoons Cocoa baking powder
1/2 Cup Milk ( 4 oz)
1 Stick of butter (1/2 cup/4 oz)
Part 2 Ingredients
1/2 Cup Creamy peanut butter (I heap mine I don't level it so its a bit more)
1 Teaspoon of Vanilla extract
3 1/4 - 4 cups of Oatmeal/porridge oats (26-32 oz)
1/2 chopped walnuts (optional)
Put part 1 ingredients into a pan and bring to a boil, let it hard boil for 1 minute. Remove from heat and QUICKLY add part 2 ingredients mix well and then quickly drop by spoonful on to grease proof paper Allow to set
They are yummy with or with out the walnuts - I use a the larger amount of oatmeal as they seem to set quicker which is why no matter how much you use you need to drop them quickly as the mixture will start to set in the pan lol
I tend to make sure that before I start I have all the ingredients for both parts ready to go the part 1 in the pan and part 2 in a bowl ready to go into the pan then I turn on the heat and start - waiting for it to boil takes ages and then of course timing the minute just right lol I tend to stir the ingredients as well before the boil starts perhaps that is why it takes ages for it to boil
I have also tried putting the finished product in a LARGE Pyrex cake pan FULLY lined with grease proof paper (so they don't stick to the pan) and letting them set, once they are set you can cut into squares (you can also grab the edges of the baking paper and take it out of the pan and cut it much easier ) 🙂
Also if doing them by drop method and they do not set you can always place them with the grease proof paper still under them onto a cookie sheet and put them in the oven (180c) for a few minutes and then take them out and let them cool I am sure that you could do the same with the "cake" before cutting it
Dust them with icing sugar for nice effect 🙂 if giving as gifts

Made the cookies and they are lovely, so thank you very much for the recipe, Reb; I hate to think what the calories are per biscuit, but .......won't stop me making some more; I added choc chips to the second batch.

Those nobake cookies are also lovely with Raisins in them. 🙂

I don't want to think about the calories either - I forgot to add you could use the Chunky peanut butter too - its a preference choice for me
thank you pat for the info about raisins never tried that before bet it is nice and will add a little extra sweetness might have to try that.

They serve chocolate brownies here with afternoon tea. I wonder if numpty supplies them? They're very nice.:-x
