Evening all.
I am having a visit in the week from a special friend who I haven't seen for a good few years,
I bumped into here while on holiday this year and we have made arrangements for her to visit, the thing is due to us both having personal commitments time is not very free so we have had to plump for a breakfast meet up.
I would love to have some scrummy ideas to prepare for a special breakfast but don't know where to start. I usually only have a bit of cereal and a cuppa.
I have googled but I haven't found anything of much help, we both need healthy nutricious low fat things due to being a bit over weight and a few health issues.
I can't take fry ups and I know my friend needs to watch fats etc.
Has anyone one any ideas to help me out.
I would be very grateful.

i make these quite a bit as we are trying up our quinoa intake
i omit the ham, and use mushrooms in half, roasted red peppers in the other
you can make ahead of time, and pop in the oven to re heat

i think adding cheese kinda negates that a little
but its cheeeeeeeeeeeeeeeese

poached eggs served covered in hollandaise sauce served on a muffin. some people have bacon or ham between the eggs and muffin, Hollandaise isnt very healthy, but yummy!

A few years ago Sainsburys used to do what they called a breakfast picnic
whiich was eggs benedict only with mushrooms as well and some sprigs
of chives on top. All on top of a muffin. It was yummy and I've made it loads
of times only for lunch not breakfast.
My favourite breakfast is banana on toast.
