I use a bread machine for making bread but have had to change to gluten free flour, I get this from a local health shop for £1.99, I use the recipe on the packet but it is too sweet. Ive altered the recipe to suit but its on the heavy side rather like a madeira cake. The kilo pack makes 2 loaves which is very good I think.
The recipe book with the machine states a certain packet mix for gluten free which I have never heard of.
I wondered if anyone has a special recipe they use that gives good results. OH isnt keen on sweet food so the more bread like I can get it the better.
Thanks in advance,

I don't make bread but I do buy gluten free by Ian Rankin which is quite good.
Take a look at this link as it has several gluten free recipes which might be helpful. You might also have to change your flour to Rice flour.

Thanks for the link Ihasa, by the look of the pictures there is nothing wrong with what im making so maybe that recipe is how it should be.
I hope someone has their own recipe tried and tested...x

You are never going to get a proper bread texture in a gluten - free loaf, as it is the gluten that gives the structure.
The best gluten-free flour I ever found was "Terence Stamp" brand, but it seems to be discontinued. We are currently using a mix made by "Dove" which seems good overall.
I found that making mini loaves or rolls worked better than making a "normal" loaf. I have some tiny bread tins (no idea where I got them from) that make a loaf the size of the "mini hovis" loaves that you used to get.
I had a quick google for gluten-free dough impovers and found this one http://www.melburyandappleton.co.uk/bread-improver---250g-10660-p.asp?gclid=CL_5voW_0LsCFWEOwwodbhUA...
and this one
I haven't tried either and have no idea if they would be suitable, or would help, but I always found that a lot of trial and error was involved in finding what worked.
I found this web-site, might be worth a look http://glutenfreeonashoestring.com/top-10-secrets-to-baking-best-gluten-free-bread/

Stroppy says,
'I found that making mini loaves or rolls worked better than making a "normal" loaf. I have some tiny bread tins (no idea where I got them from) that make a loaf the size of the "mini hovis" loaves that you used to get.'
Try Lakeland I think they have the mini loaf tins, I got some a few years back for my mum.
Dove flour seems to work OK, each time you make it, lower the amount of sugar but very gradually as if you put in too little the yeast won't work, then you might get it to taste less sweet, I have done this with ordinary bread in the machine.
