In a bit of a weird situation, and would appreciate some guidance on how to proceed (as responses to similar questions on the forum haven't really clarified the situation).
In brief, I purchased three t-shirts from the same seller. None of these fitted, so I started returns request for each (listing 'didn't fit' as the reason for the return).
At the advice of the lady in the Post Office, I returned all three t-shirts as a single parcel (as they were originally sent by the seller). However, tracked postage labels for each item (from Ebay via Royal Mail 48 tracked) were affixed to the parcel and scanned (so I have tracking information for all three items on my Ebay account).
Skip forward to yesterday, and I got confirmation that one of the T-shirts was returned (meaning all three were) and the cost of that T-shirt was refunded by the seller no problem. However, the tracking information for the other two items hasn't updated to 'delivered' on Ebay, meaning no refund has been processed. I suspect that when the parcel was delivered, only the QR for the single T-shirt was scanned but not the other two (meaning these will be perpetually stuck as 'with courier' but not 'delivered' - meaning no refund).
I contacted the seller to ask if they could confirm receipt of the other two t-shirts/ process the refund for these, and they said to take it up with Ebay. What do I do here?

You can't put 3 different tracking numbers on one parcel,they should have been returned individually to get refunds for each.
You will struggle to get refunds for the other 2 unless you can prove they were delivered.

Hi,
Thanks for taking the time to respond. My fault, I guess. I just did what I was advised to do at the Post Office. Only person who could confirm these items were delivered is the seller, so I guess I am out of luck.
Just for reference, will my return requests just automatically close after X amount of time elapses? Even with the tracking to confirm that these were given handed over to the courier?

Unfortunately they need to be delivered or delivery attempted on the tracking in order for ebay to force a refund. Post lady absolutely misguided you, and seller knows it and is clearly keeping your money intentionally knowing you can do nothing via ebay.

Thanks for the reply, and for confirming my suspicions. Worst is I even asked at the post office if I needed to send each separately and she was like "no, it should be fine..." Am I right in thinking that Ebay will just close the return request after X days expire with no update to tracking?

Never take the advice of post office staff, they know nothing about the workings of Ebay. Recently I took a parcel with stamps attached, just needing proof of posting, the counter assistant did not know how to do it, wanted me to pay the postage again. I had to take it to another post office.
