I'm unsure whether I have to deduct the VAT on eBay fees from the expenses. It's about my self assessment as a sole trader. I'm not VAT-registered.

whatevers been charged gets declared as expenses. So if the fee was £10 + £2 VAT = £12 paid, you knock the full £12 off as expenses.
If you were VAT registered then you'd be able to claim the £2 back but you aren't so it's not relevant.

No. you don't do that. Your ebay expenses is as billed. i.e if your ebay bill (expense) is £100 including vat your expense is £100

No you do not deduct VAT if you are not VAT registered , you cannot reclaim VAT on expenses,
