I have requested a return on a defective product, the seller has issued a refund, I still have the product do I need to send it back as I haven't even gotten round to printing the returns label yet, they are now asking for videos of the defective item.

Ignore the request for videos.  You probably won't be able to attach them to your message and you are not obliged to provide them.

Once the seller refunds, the return label is defunct because Ebay's automated system assumes the seller does not want the item back.

I would send one polite message saying thank you for the refund and checking if they want the item back. If they do, they need to send you another label to send the item back.  I would also give them a date to respond by and say that, if I didn't hear from them by the date given. I would feel free to dispose of the item.
