Have you been using the bog standard listing form or the Advanced Selling Form?  If you were to set up a template using the Advanced Selling Form then when you set it up make sure that the "Automatically Relist This Item If It Doesn't Sell" box is not ticked, and avoid lising items using the Buy It Now format, as eBay spoiled the Buy It Now listing format last year and tampered with it to such an extent that Buy It Now listings are, in effect, now nothing more than Good 'Til Cancelled listings via another name.  To end Buy It Now listings if the item doesn't sell you have to pull the listing manually.  Therefore, if you don't want unsold items to automatically relist set the listings up using the Auction format, setting the starting bid at the same price that you would have put as your Buy It Now price, and make sure that you do not activate the "Automatically Relist This Item If It Doesn't Sell" function.  If you do that then if the item doesn't sell it will not automatically relist, but if it attracts a lot of interest and you receive a lot of bids for the item then you could stand to make a lot more money from the sale of the item than if you had listed it using the Buy It Now listing format.

It's just one of ebay's relatively new features.  For a current listing you can end it early.  On My eBay it's via More Actions, far right of item on your selling page > End Item.  On seller hub go to the Active listings page, select the checkbox next to the item you want to end and from the dropdown menu select End item.

For future listings on a PC/laptop you can cancel it during the listing process just above submit.
