I sold a vehicle, the listing said cash on collection, however the buyer used Paypal.
I am still at 'Awaiting Payment' after 3 days, however the buyer has shared a screenshot, from their ebay and the vehicle is marked as Payment Pending, and is telling me that the money has gone out of his bank.
Now this is the bit I would like advice on, the buyer claims that when we do the QR code scan, when they come to collect the vehicle, that is when the funds will be 'released' and it will the be marked as paid.
Is this what will happen, why doesn't it say 'item paid, funds on hold' or something like that.
I am not very happy about this, as they could drive off with the vehicle and I don't receive the money.

Only accept cash on collection. Nothing else is safe for you. Cancel this transaction

A buyer cannot pay for a vehicle using PayPal through eBay checkout.
They are trying to scam you.

adding to the advice already given -
Its a SCAM, ask yourself how the buyer got your PayPal address to 'pay' you directly - you have not been paid.

Classified Ads. at total fee of £19. 99 will allow the exchange of contact details for viewing and price negotiation over a 30 day period --- set the Start price at or near the price that you would find acceptable --- Avoid inviting Offers which may never complete --- just continue to Negotiate an acceptable selling price and only remove the Ad. when you have a definite buyer with Cash in hand or a Bank Transfer is safely deposited/confirmed before handing over Vehicle keys/documents on buyer viewing /collection. No additional FVF selling fee is charged. Do not accept PayPal payment.

I understand what you all mean mean and I share those concerns, one thing I can't reconcile is the screenshot from the buyer (which I have attached) that says payment pending, so there has been some attempt to pay

Why are you trying to convince yourself that payment has been made/attempted?
such a screenshot can be made up on a computer.
In my other post I asked you how did/could the buyer get your PayPal address to 'pay' you directly? - they cannot pay through eBay.

I wouldn't even bother with allowing this buyer back to buy again, they are trying to scam you once, going to quite a lot of trouble making that false screenshot of payment pending, I doubt they'll honour a genuine payment
PayPal is not allowed for paying for vehicles on eBay. Click on any car for sale you will see it's Cash on Pick up is showing and no other payment via cards or PayPal are there.
Cancel this order and block this person from returning, they'll only cause further trouble for you.

When you cancel it, be sure to give the reason as the buyer didn't pay. Otherwise eBay will still charge you a final value fee based on the selling price. (You willl still have to pay the listing fee, which is not refundable.)

If this is a scam, it's likely that the "buyer" may try to continue it by faking proof that his PayPal payment has reached your account, and asking you to return it. Do NOT do so unless you have logged safely into your PP account the check whether you have actually been paid. If not, you should make PP aware of this attempted fraud by reporting it to them.
