I put an item on listing and after the time ran out without selling, Ebay put it back on again automatically. I didn't think they could do that without my say so.

It must've been set to auto relist. It will do this 8 times unless you revise it and untick auto relist (which can be found in the Pricing menu.
You can select to end it now if you wish.
