I make and sell handmade hats. I bought 50 large first class Royal Mail stamps before the price increase. I want to carry on using these stamps but ebay will not provide the buyer's name unless I buy a postage label. Suggestions how to use my own stamps please.

“Make and sell” You need to read the definition of what is classed as a Business Seller.
That makes you a Business Seller and if properly registered then I think Simple Postage would not apply to you.

As advised, upgrade to a business account.
You will be trading legally, your sales won't have the Buyers Protection Fee added on, and you won't have to use Simple Delivery.
You can open a new account or keep this one if you sometimes sell your own unwanted personal possessions.

I'd upgrade this existing one (as it has lots of feedback) to a business account.
Create a new private account to list your personal items on. Just sign up again with the same details but a different email address (each eBay account requires its own unique email address).
So much easier for accounting then.

Thank you for your time and advice. I have decided to find a different outlet for my hats. I sell very few now and yarn has become so expensive. I am too old for all the changes going on with ebay.
