My buyer has paid for the item and has now requested collection in person and has already collected

 My buyer has paid for the item and has now requested collectionnin person. The item has been collected. How can I inform that the item been colleced, cancell delivery option(to print delivery label) and received money?

If you've paid for an unused label you can cancel it here:
https://www.ebay.co.uk/claims/simple-delivery/refund/seller
If the buyer paid for it it will be refunded to them automatically in 30 days.

The buyer paid for delivery about £5. The item he purchased was bicycle £100.

The money is in ebay account. How can I let them know that the buyer got his item via collection?

You can't if the buyer selected postage at checkout.   The payment will be released anyway in 14 days.

So I don't need to do anything? Create label/QR code?

I spoke with the buyer and he said he sent an ebay a message that he collected the item.

There's nothing you can do as it is at the buyer's end to receive that all important collection code,  which only appears if the item was listed for collection.

Messaging eBay will not speed up the process,  your payout will be held now,  for a minimum of 14 days.
