See if this helps next time you go to list an item, after selecting Sell, go to the top right of the page, and select the business / advanced listing tool. Ignore that it says it’s for business and high volume sellers only, it isn’t, it’s for everyone to use, it will give you more control over your listing, and you need to just fill in the mandatory, starred item specifics, and skip the others, or enter N/A into the little boxes.
Use a desktop browser and not the app to manage this.
