Are you sure you want to do this? You will have to pack everything up yourself as safely and securely as possible, surely by offering collection only you must have hoped to avoid doing this?
If you allow the buyer to arrange delivery they won't be able to raise a case under the ebay money back guarantee, as the MBG specifcally prohibits claims where the buyer arranges delivery. You could cancel the sale by using the reason 'Problem with buyer's address' and get your ebay FVFs back.
If you still want to sell to them you can go to 'send invoice' and add the Postage to it in the P&P box.
Send without pressing Reset. Buyer will receive an invoice for the item plus P&P.
Collection only items should be collection in person and paid in cash
Why do they need an invoice?.
The buyer should get a code for you to scan or add to the sold item when they collect
Read the link on collection items

You seem to have sold that item twice or did you have two
If you sold it previously did you have a non payer
