So I've been hearing a lot about GPSR but not really taken much notice in honesty. Going to have a good sit down over the Christmas break to get things in order.
Should there be somewhere on each listing to add the relevant required information? Or have I missed something.

Your problem there will be...the policy comes into effect on December 13th.
If you go into Edit a listing - you can find a category now called 'ITEM DISCLOSURES'

Has to be the most mental thing I've ever seen...are private sellers supposed to fill this in when they sell used items? Or just business sellers?
Either way it probably makes no difference. I think this might be the final nail in the coffin anyway.

The last two FAQs on this page are probably of relevance...
There’s no exemption for products whose manufacturer no longer exists. However, according to Article 51 of the GPSR, products that were first supplied to the EU market before December 13, 2024, and comply with the General Product Safety Directive (2001/95/EG), can continue to be sold without adding GPSR-required information in listings. This applies even if the manufacturer has gone out of business. For example, if you're selling a compliant product that was made available in the EU before the specified date, you don't need to include GPSR-related information, such as the manufacturer's details, in your listing. You may still have informational obligations under other regulations.
Article 51 of the GPSR is also applicable if you sell second-hand products that were first supplied to the EU market before December 13, 2024, and comply with the General Product Safety Directive (2001/95/EG). For these products, you’re not required to provide GPSR-required information in your listings. However, you may still have informational obligations under other regulations. We encourage you to add any GPSR-related information to your listings if you believe it’s necessary.

"...are private sellers supposed to fill this in when they sell used items?" - this is just for business sellers and applies to both used and new items.
It is felt that these regulations could be the reason why eBay are coming down on businesses operating on private accounts. If there is an issue going forward with an item supplied by a 'private' seller, even just a product recall, eBay's diligence could be called into question by the EU regulators who have form when it comes to dealing with large corporations. An investigation by the EU regulators could find eBay's lack of diligence culpable and hold them financially liable.

Interestingly, when listing an item...there is no place to put the required information for GPSR. When I go back in to 'edit', the listing. PooF! There it is. Like magic!
