John, I've had a bit of search, without much success. Even my Michelin Tourist Guide for Normandy makes no reference to the wildlife of the region. The wildlife is similar to that of Southern England but there's a lot more of it: - there's a lot more unspoilt countryside!
Wherever I have travelled in France the local information brochures have contained photos and info. of birds and animals, so it may be worth contacting the regional tourist boards.
This link is to a tour company website offering a tour in Normandy to observe wildlife. If you read through the description it gives an idea of the sort of wildlife which can be seen.

If you really want a book, I would recommend any guide to the wildlife of Britain and Europe. My birdie-book covers those, and North Africa!
