I purchased an item that was confirmed as counterfeit by Apple Store. I have tried to start a return but the seller has declined the return and the return has been marked as closed.
How do I go about progressing this further.

If 30 days have passed your item's last estimated date for delivery of this item, then you are too late to open a claim for a refund with eBay, and that's why it closed.
You'll need to turn to your payment provider now for help with a refund, most offer a 120 day buyer protection policy.

Customer service is an absolute joke. My return has been marked as closed and final. I am now stuck with a fake set of airpods that are of no use to anyone.
Can you please confirm that you help facilitate the sale of counterfeit goods on your website.

Umm firstly it's not my website, I am a member like yourself.
If you receive a counterfeit item, you have 30 days, as stated on all listings, to return it at the seller's expense for a full refund. Looks like this time lapsed for you, so I've advised your next move is to turn to your payment provider.
There are 7 billion listings on eBay, none which eBay physically see or can check for validity of being the real thing. eBay rely on cases opened by buyers those which are on time and valid, too many on an item raises red flags, eBay will then investigate, and can lead to the item and or the seller being removed from their site, permanently.
