They do it in aid of a charity.
With shows where there is a cash prize, OK, the winnings go to the charity
But what about programmes like Celebrity Mastermind, where there is no cash prize.
How does that work, and how do the charities benefit.

Are they anything to do with charity? Perhaps they're just for the benefit of the viewer. I expect the celebrity contestant gets a fee just like any other job. I quite like seeing which celebrities are bright and which are thick!B-)

On CM they probably give their fee to a charity of their choice (?)
The commercial channels get their charity fees from folk phoning in to answer "difficult" questions like:
What is the capital of England?
a) Brussels
b) Strasbourgh
c) London

The original 'Pointless' is a great TV quiz show, way way better than the majority of the others, BTW
