Roughly how many sales is it before eBay stops holding your funds untill the buyer receives item/ instant availability of funds.

Just to add that everything you need to know about selling on Ebay, including how the 21-day payment hold works, is in the Seller Centre (link at foot of any page). You also have the Help pages with their integral search to refer to (links at top and foot of any page).
Ebay doesn't hold payments, by the way - PayPal does, as Paypal is the payment processor. Ebay never sees a buyer's payment - it goes direct from buyer to seller via PayPal.
