Can you see various address options on this page such as "registration address", "delivery address", "dispatch address", "return address" and "payment and collection address"? If so it is the last one (payment and collection address) that you need to update.
Note that changing the address after the sale has been made will not stop DHL going to your old address. You're most likely going to have to explain the situation to your buyer then cancel the sale, ensure all your addresses are correct then relist the item sending your buyer a link to the new listing.

Despatch address show the address i sent it to and also ebay confirmation shows current address.. if I cancelled will I get my postage costs back ? As it no my fault ebay cant sort there logistics out

The despatch address is the buyer's address; nothing in your registered addresses would change that. You need to go into the order confirmation, click "More actions" then select "Print invoices and more". That document should show a "Post from" (it might show "Collect from") address; which address does it show - your current address or your old one?

If the collection and/or post from address you had registered in your account was incorrect I doubt you'll get the label cost back. If you're sure all your registered addresses were correct before the buyer placed their order you need to contact eBay's customer services before doing anything else and ask why DHL is trying to collect from your old address. They may or may not be able to help.

Before trying eBay Customer Services as it's a bit of a trial to get through to a live agent now, see here if your addresses are correctly registered.
I say Addresses plural, as there are 5 to correct.

If you do need to contact Customer Services wait till 8 a.m. when live agents appear, and there's more chance of Dublin answering use this link...
It's not easy, you need to scroll past ' How Can We Help you today, to the very bottom and click on the Contact Us below Need More Help?
That takes you to an annoying AI bot, but if you persevere keep asking questions it cannot answer and Insist on an agent, they do finally put you through and say .... waiting time ** minutes! Took me a good 10 minutes arguing with the bot then a 2 minute wait to speak to Dublin.

Here is ebay's confirmation of collection with my current address however DHL are going to my old address i cant cancel order as it shows as i have posted it even though they havent collected it and the Stupid Ai bot has blocked my from asking Questions.. i need to speak with someone at customer services

Hi Marco, the OP says they have the right collection address in their account settings, and the right collection address on the label, but DHL are going to an old address to collect. Can you check this please as it could be a serious issue for DHL collections.

All my old address has been cancelled as above the delivery is for my current one..

Sorry what does that mean exactly? As already pointed out the delivery address is nothing to do with this issue which is about the collection address used by DHL to collect from you.
Did I get something wrong in my post to Marco?

Yes its about collection there trying to collect from a old address when as you can see above in photo that though ebay its got my current address correct and the tracking number
