Hi , I have sold an item and sent it by Royal Mail tracked but selling page says I should have used evri , so how do I show as dispatched , thanks

Using a laptop / PC and Chrome you may be able to do this manually changing the service and tracking where the item was marked as dispatched.
If not, contact eBay Customer Services they should be able to do this for you.
This is the easiest and quickest way to contact eBay Customer Services, for a Call Back option.

I rang them but an absolute waste time , because I used Royal Mail and paid myself and the label was with Evri under this new system , then basically the buyer will get a refund of postage not me , so I’ve been screwed over ☹️

Not sure who you rang as there is no phone number for Customer Services, it's a Call Back option.
If you used Simple Delivery then the buyer paid for the postage and if it wasn't used because you used a different service they receive the refund.
If you bought the original postage with eBay / Packlink then you can receive a refund for the unused postage, but may have to wait 24 hours for the label to appear before being able to cancel it.

The refund will take between 5 - 21 days to process.
Who did you speak to at CS? From my post above you can see when I recommend to contact CS so you speak to Dublin.
End of the day if you don't have tracking to show delivery your payout will be held for 14 days before release.
