Simple Delivery is only optional in certain sub-categories like Trading Cards, Coins, Stamps, Mobile Phone Cases, CDs, and DVDs.
For other categories where you cannot opt out the alternative is to list with free postage, factor that cost into your item price and buy your own postage outside of eBay.
To mark dispatched you still need to generate the original SD label (Get prepaid label > Get prepaid label). To get the buyer's address you have to print label. It will remain unused. The option to change the tracking has been removed but you would be able to add the new number to a "not received" case if that were necessary.
