Hi,
I recently sold an item and when I went to get the persons address I seemingly instigated an automated service that said I’d dispatched it and it provided me with a tracking number from a courier that i didn’t want use this time .
I have informed the buyer of all the details but just wanted to see if I can change the details on the orders section to show the actual courier and tracking number

Yep, that's how simple Delivery works now for Private sellers, buyer selects the service and pays for that label which is sent to you either to print off or by a QR code.
If you selected a different service you could try and ask Customer Service to change the tracking for you, not sure if they still do, if you opt out of SD, if they don't change it, all it means is there's no tracking to show delivery, and your payout is released after 14 days.
This is the easiest and quickest way to contact eBay Customer Services, for a Call Back option.

This explains eBay new Simple Delivery, it's to be mandatory for all Private sellers.

Assuming Simple Delivery was on your listing you can't change the tracking nummber. If you paid for the original label you can cancel it here:

If the buyer paid for it it will be refunded automatically in 30 days. The payment will be released anyway in 14 days.
