Just wondering if anyone has done this?
I've sold an item through the GSP and the hub is quite close by. Is it possible to just drop the item off to the address on the shipping label, rather than paying for postage? Also, if I do this I would need to by a postage, so what label would I put on the item?

To clarify this question has come up before and you cannot deliver in person to gsp. You must post.

If you hand delivered the item to the Hub, you'd have no proof the item reached the hub.
Tracking is essential here , if a buyer opens a case for item not received, all you need is to prove it reached the GSP hub and for this, you'd need tracking.

Good point about proof of receipt. I was thinking I could just take a picture of the package with the receiving person, just as some courier do. But that is obviously not as clear cut as actually posting it and having a proof of postage and actual tracking receipt.

Nope, eBay would not accept any photo evidence for any later claim for item not received, only tracking showing delivery, is your proof here.
