You may be able to mark as Paid and Dispatched under Orders on your Ebay seller hub

Unortunately, the option to mark as paid and dispatched (collected) is no longer available for collection items, and that code is essential for proof that the item has been collected, @redwick1
Send the buyer a polite message to look through their emails, eBay messages or even in order details for the purchased item, the 6 digit code must be there. They can then send those figures to you, for you to manually enter alongside the order details to the left of ... Confirm Collection.
If they cannot or will not oblige, you may have a 21 day wait for the payout to be released to you.

There is no paid and dispatched / collected option to select anymore, the only way to mark as collected is scanning or manually entering that collection code.
Others have also agreed that no code brought , means no item to be handed over.
It may be an idea if there are to be future collection items, to make a very clear Note in the description box for the listing, that on purchase and payment , it is essential to bring this collection code when collecting said item.
Personally, when the item is purchased, I would also send a polite message to remind the buyer, to bring this code with them.
It's a change that is not popular with sellers but a change when made by eBay, is usually here to stay.
