So, that you have full seller protection it's best to cancel the order and relist as a collection item, that way, your buyer will receive and must bring with them, a 6 digit QR code, which you scan or manually enter the numbers, and this is the only proof you have that the item has been collected. Do not release the item without receiving the code.
Send the buyer a message explaining you'll be cancelling and relisting with a collection only option. Cancel citing Buyer Requests to cancel that way your seller performance is not affected.
Make sure in eBay messages you make it very clear the reason why the item is being de listed, that it's to be relisted for the buyer to buy again on eBay. Make it clear it's not being done for an off eBay sale. eBay read all messages going through their system.
