Bait and switch

I purchased an ipad air 2  from a seller selling multiple various Ipad's now the seller is stating i selected the wrong item and wanting to send a second generation Ipad even though in the reciept and on all the order confirmations it clearly states Ipad Air 2 and on paypal, is this a clear Bait and switch or am i missing something.

As you have purchased this, go to your purchase history in My EBay and check exactly what you have bought.

If it's an ipad air 2, point this out to the seller. If they insist on sending the wrong item you can use eBay's money back guarantee to claim a full refund, with the seller providing a prepaid return label (if the item is located in the UK).

If they're right, and you have made a mistake, you can ask them to cancel the sale. Or return the item, at your own expense, if they've already posted it (assuming that they're a UK business selller, who have to accept returns).
