Ok CG. I've seen you post this before but I'm still none the wiser. Could you explain more? You peel the potatoes and then bake them in the oven? If so, why?

I felt like a change ok?

Well, Ruthie, I suppose it's really because my mum always peeled them first.  Sometimes a potato looks fine when the skin is on, but when you peel it it's got those black smudgey patches in it or brown specks or even a mark that as you cut away deeper and deeper it opens up in the centre with a big rotton hole!!  I can't imagine finding that on your dinner plate!!  I never eat any vegetable peels, carrot, parsnip, none at all.  What I do with my potato is stab a pointy knife all round it (about 1/4" deep) then put a little oil in my hand and smooth it on the outside.  This doesn't make it a roast potato but it just makes the outside lovely and crisp.  Woman LOL

Oh I see. Smiley Very Happy Personally, I love the crispy potato skin, but I never cook carrots, parsnips etc with the skin on. Can't stand it.
