Sold a book from UK with global shipping as an option. Buyer from Canada wins, only for eBay to tell him I won't ship to Canada. Buyer also states he checked before bidding and shipping to Canada was an option then. What to do?

You could cancel with buyer's agreement and relist with direct postage to Canada for the buyer to buy again.

But why is it telling buyer I won't ship to Canada? I've never had this issue before. Can this be changed retrospectively or do I need to relist? Will other items I'm selling possibly have the same issue?

Sometimes it relates to the item you're selling. It's hard to know for sure.
