Hello.

I bid on an item today that had a starting price of £10. It also had a best offer option so I put in an offer for £12.50. I then had to go and do other stuff and came back this evening to check on it's status and in my emails it says that the offer was "auto declined" but the winning bid ( the only bid ) was £10! Can somebody explain why somebody would accept a bid for less than my offer?

Once there is a bid there is no Best Offer. You say you bid, in which case there was no Best Offer you could make. Even if you had made a best offer that does not buy, the seller has to accept it.

because they were hoping the bidding would reach a higher price

once a bid is made all offers are cancelled

Someone bid while your offer was pending. The bid cancelled your offer.
