I've managed to bypass the delivery date problem by changing my default shipping service from 'Evri 2 to 3 days' or from 'Royal Mail 2nd class' to 'other 48 HR courier' . I did it from my business policies. This has seemed to have solved the problem for now. I guess I'll have to change it back after Christmas.
