Just received this email it includes
"New Simple Delivery rates will apply to listings priced between £75 and £750. This also includes live listings, and there’s nothing you need to do – the updated rates will apply automatically. View our updated rates."
but the link states "Simple Delivery will be optional for items that are £20 or under and in certain sub-categories like Trading Cards, ..... " Inconsistent there's a surprise!
1) Have eBay raised the threshold for mandatory Simple Delivery to £75 but are not saying so straight?
2) Also what currently happens now when an item starts at a low price and can be sold outside of Simple Delivery but sells for more?
3) I am guessing BIN is the only safe way to avoid it?

No - all they are saying is there's new prices for postage when items are over £75.
Also what currently happens now when an item starts at a low price and can be sold outside of Simple Delivery but sells for more?
It still states....
Simple Delivery is currently available to private sellers in the UK selling:
Items in eligible categories that have a 'Buy it Now' price or auction starting price of £750 or less
A weight of up to 30kg
Dimensions should not exceed 120 cm x 80 cm x 80 cm
How is my item protected?
Items are protected against loss or damage from the moment they are scanned into the courier’s delivery network until they are marked as delivered by the courier.
