What are my rights as a seller (or what should I do) if I posted a parcel and have proof of posting, but there was no tracking and the parcel wasn't delivered? I used Ebay's Simple Delivery.

Have you read Ebay's simple delivery guidance? That explains in what circumstances you are protected.
