Why is eBay with holding my funds especially after the customer has had them for nearly 3 days now... Is it worth taking a trip down to their head office or issuing a small claims court action against them..?

This is explained in eBay's guidance or sellers. It's a sensible precaution to prevent new sellers from withdrawing the money and leaving eBay to compensate their buyers for items not delivered - which some used to do. And you accepted this condition in the user agreement - which you have clearly not consulted.
The feedback you left for your buyer, ranting about eBay is absurd. Even more so as you have deleted your banking details. All you have achieved is to prevent them from paying you when your payment is released.
