I sold an item. Ebay suggested the size but it's too small. How do I change from a medium to a large parcel after I've made a sale?

If you used the recommended parcel size when listing your item and it exceeds the maximum size and weight of the label, you won’t be charged any additional costs. Just go ahead and use the Simple Delivery postage label. The courier will accept your package providing it remains within the maximum weight and dimensions for the service.
But you may be able to change the size by clicking on Get Prepaid Label and under the heading Package details click on the pencil icon and you should get: "No extra charge. Changing your package size won’t cost you anything." Then use the dropdown menu to change dimension or weight.
If none of the above applies then cancel/refund the transaction with the buyer's agreement (via the dropdown menu arrow for the item on your orders list) and relist with correct postage for the buyer to buy and pay again.
