How do I go back to select my own postage not the simply postage

As you are selling multiples of new items, you should be a business seller.As such, you can then choose your own postage method, no more SD.

By the way there are 5 addresses you neeed to change in your account, including one specifically for returns.

Custom Postage will show for certain items / certain categories, say lightweight itor For Private sellers eBay expect you to use Simple Delivery.

One easy way forward for you is to register correctly as a Business seller then you can use your own postage.

A Private account the one you are using is for selling used, unwanted items say a garage , wardrobe clear out. To sell all new items and in quantities of more than one you need to register as a Business then you can use the postage you want.

It's easy to change over see here:

Go to Account settings in My eBay.
Select Personal information.
Select Edit next to Account type. You may be asked to sign in again.
Select Confirm to upgrade to a Business account.
Specify whether you operate your business as a legal entity or as a sole proprietor and select Continue.
On the following page, enter your business information such as name, contact information, and returns policy. Then select Save.

Probably best to use a PC / laptop for this, and not the app or mobile browser. Chrome seems to work best on eBay.

There are only certain categories, items have to be under £20 and a large letter size, to have custom postage.

Your other option is when listing offer free postage (seller pays) use your own postage method and claim back the unused label (which take apx 30 days) you will also get a hold on monies of upto 14 days by not using the ebay label.
