Complicated as may involve refunds, which take time, and buyer may not want to pay again.

I just looked at one of your listings, and in the category you used, If price is up to £20 and up to 100 gms in weight, you should have option to choose your own method and cost of postage.
Many of your items for sale could well be in categories that can be exempt from Simple postage, have you looked into this?
Not easy to determine exempt categories, but sometimes exploring similar categories can find something that works.
