Either cancel them or set time away. (Link below.)
As you can log into your account, is there anybody you could ask to package and send the items you have sold recently? Your health is more important than selling a few things on Ebay but you may find you get negative feedback and a 'slap on the wrist' from Ebay if you don't get those items sent out. Even if you contact your buyers and they are happy to wait, Ebay will hassle you to send the sold items and that may be quite stressful.

You still have items for sale.
End these now, they'll go into your unsold listing for 60 days if you are on My eBay Selling, and for a maximum 90 days if you are on the Seller Hub, you then relsit from them anytime during those periods, when you feel better. 🤗

I suggest you message buyers & explain reason for delays.
If you can't post items you still have to sell, may be better to end them until you recover.
Ebay will only go by tracking, so if it shows late delivery they may restrict your account.
As this is automated, no human will look into reason for delay.
I hope you recover soon.
